Subject: Salad recipes

I'm looking for two recipes for cool summer salads.

The first is for a cole slaw which has a very light almost "fluffy"
whipped dressing.

The second is a good carrot & raisin salad which is easy on the
pineapple, but still nicely sweet. It seems to me I remember a hint of
cinnamon in the mix.

Anyone have favorites of these?
