Peanut Butter Cookies

1/2 cup butter, softened to room temperature
1/2 cup peanut butter (I use Jiff )
1/2 cup granulated sugar
1/2 cup light brown sugar
1 large egg, well beaten
1/2 tsp. vanilla extract
1 3/4 cup all-purpose flour
3/4 tsp. baking soda
1/4 tsp. salt
1/2 tsp. baking powder
About 1/4 cup chopped peanuts (optional) *

Cream butter and peanut butter-add the sugars gradually. (I mix the two
sugars together). Beat the mixture until fluffy. Add the egg and
vanilla- then blend in the dry ingredients ( I also mix these together)
to the peanut butter/sugar mixture. This will be dry so with your
hands, form into small balls rolling between your palms. Place on a
cookie sheet lined with parchment paper about 1 1/2" apart. With a
fork, flaten the dough in a criss-cross pattern to about 1/4" thick.
Bake 375 about 8 minutes. Let cool on the cookie sheet about 5
minutes then transfer to a rack to cool completely.

* If desired, sprinkle some chopped peanuts on top of the cookies
before baking. I have also used chunky peanut butter with good results.
Makes 3 1/2 dozen cookies. Jan
