Hummus and Spicy Lamb Pitas

Hummusr use your own recipe
2, 15 oz can drained chick peas
1/4 cup sesame tahini
juice of one lemon
1/2 cup water
2 cloves garlic
1/2 tsp cumin
1 tsp salt or to taste

Lamb mixtu
1 Tbsp olive oil
1 l onion diced
1/4 tsp each: cinnamon, allspice, fresh grated black pepper, crushed red
pepper flakes 1/2 lb ground lamb
1 Tbsp fresh parsley chopped( garnish )
2 tsp smoked red paprika ( garnish )
Pita bread

This recipe has some intriguing flavors but one can substitute ground beef
or ground turkey also. I especially like the texture and flavors of the
lamb and hummus together. I'd serve a lettuce, tomato, cucumber, onion
salad along with this. Combine hummus ingredients in food process and
process smooth . Place hummus in a bowl and make a well in the center. For
lamb, heat oil and saute onion with spices until onion is tender. Add lamb
and cook and stir until lamb is browned. Remove lamb mixture with slotted
spoon ( letting any fat drain off ) and place lamb into well of hummus
mixture. Sprinkle everything with the parsley and smoked paprika. Serve
along with fresh pita. Yield: 4 to 6 servings Note: smoked paprika has an
entirely different taste than regular paprika. You must try it to
understand. This paprika may be found at gourmet grocers etc. However you
can use the regular paprika also.
