Squid with Corn Salsa
When cooking the squid do not overcook as this will turn it very 'chewy' Serves 1 Preparation time less than 30 mins Cooking time 10 to 30 mins Ingredients For the squid: 2 squid, cleaned and scored 2 Tbsp olive oil 1 garlic clove, chopped For the salsa: 2 Tbsp olive oil 1 corn on the cob 2 Tbsp fresh coriander, chopped 1/2 red chilli, seeded and finely diced 1 lime, juice only salt and freshly ground black pepper 1 lime, cut into wedges Preheat 2 griddle pans. Preheat oven to 250C/500F/Gas 9. Prepare the salsa by drizzling the corn with olive oil. Place the corn in the griddle pan and grill for 2-3 minutes, or until the surface is browned. Transfer the corn to the oven for 10 minutes. In a small bowl combine the squid, olive oil and garlic and set aside. Remove the corn from the oven and use a sharp knife to cut the kernels away from the cob. Place the kernels, coriander, chilli, lime juice and seasoning in a small bowl. Remove the squid from the garlic olive oil and griddle for 2-3 minutes. Remove squid from the heat. Spoon the salsa on to a plate, top with the griddled squid and serve with the lime wedges.
