Lemon Zest Cookies
3/4 cup butter, softened 1 Tbs lemon juice, room temperature 1 tsp lemon zest 2-1/4 cups all-purpose flour 1-1/2 cups powdered sugar, sifted 1/4 tsp salt Preheat oven to 350°F. Combine butter, lemon juice and lemon zest in mixing bowl. Mix well. In another mixing bowl combine flour, 1-cup of powdered sugar and salt. Mix wet ingredients into dry ingredients and stir until just until moistened. Spoon dough into cookie press. Press cookies 2-inches apart onto lightly greased baking sheet. Bake 10 to 12 minutes, or lightly browned. Roll cooled cookies in remaining 1/2-cup of powdered sugar, shake off excess. Makes about 3 dozen.
