It actually goes like this: You julienne carrots, cucumbers, avocados, you cut garlic, jalapenos, onions, and cilantro (if you want something else, fine). You boil glass noodles and make little thumb sized packets. You put all that on a serving platter with crab meat and shrimp. Then you have a bowl with hot water on your dining table and soak the round rice paper for a while until it is like soft rubber, you put it on your plate, fill it with the noodles and whatever you like from the platter and then roll it like a burrito. The size should then be around 1 and a half to two inch in diameter and around 4 to 5 inches long (just to give you an idea) You dip that in a mix of asian chili-sauce (the one with the rooster) and Hoisin-sauce.
