Captain Whidbey's Washington Apple Cake (Kansas)

Ingredients:

3 eggs
1-1/2 cups sugar
1 cup oil
1 teaspoon vanilla
2 cups all-purpose flour
1-1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped walnuts
4 cups thinly sliced peeled tart apples
Cream Cheese Frosting

Procedu

Beat eggs until fluffy. Slowly add sugar, beating until thick and
lemon colored. Add oil and vanilla. Combine flour, cinnamon, baking
powder and salt; mix into egg mixture. Stir in walnuts. Arrange apples
in bottom of greased 13 x 9-inch baking pan. Pour batter into pan and
spread to cover apples. Bake at 350° for 60 minutes or until cake
tester inserted in center comes out clean. Cool. Spread with Cream
Cheese Icing. Chill, if desired.
