German Pancakes
From the kitchen of The Reads Washington, DC German Pancakes The most difficult part of this recipe is that you need to find 2 10" non-stick frying pans that can go into the oven at 500 degrees. (Be sure the handle doesn't melt). Preheat oven to 500 degrees and heat two frying pans. While these are heating, make your batter. Batter: 1 cup milk 1 cup all-purpose flour 6 eggs 1 teaspoon vanilla 1/4 teaspoon cinnamon 2 tablespoons butter Fruit (Lucky Leaf Dutch Baked Apples are my favorite, but you can use most fruits - the only one I've found that doesn't work well is fresh strawberries) Bananas, blueberries, cherries, peaches, apples (precooked) all work very well. Powdered sugar Fresh mint (for garnish) Maple syrup Mix first 5 batter ingredients and set aside. Once you have made the batter, take the hot frying pan from the oven and place it on the stove over medium heat. Melt one tablespoon butter and add the fruit. Pour 1/2 of the batter over the fruit and put back in the oven. Bake for 5 minutes on 500 degrees and then reduce heat to 350 degrees and bake for 15-17 more minutes. Remove from heat, shake pan to loosen from edges and turn out onto a serving plate. Cut into eight slices like pizza and sprinkle with powdered sugar. Garnish with fresh mint and serve warm with maple syrup. |
