Kahlua Chocolate Layer Cake
Recipe By : Serving Size : 10 Preparation Time :0:00 Categories : Cakes/Pies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CAKE 3 large eggs -- separated 3/4 cup granulated sugar 1/2 cup butter 1 cup packed light brown sugar 2 1/4 cups all-purpose flour 1/2 cup unsweetened cocoa powder 3/4 cup strong cold coffee 3/4 cup Kahlua FROSTING 6 tablespoons butter 1 pound confectioners' sugar -- sifted 3 tablespoons Kahlua 2 tablespoons hot coffee -- more if needed 1. For cake: Grease and flour two 9-inch cake pans. Preheat oven to 350°. Beat egg whites until frothy, then beat in granulated sugar until stiff peaks form; set aside. In large bowl, cream butter and brown sugar until fluffy. Beat in egg yolks one at a time. In small bowl, sift flour, cocoa, and baking soda together. Add to creamed mixture alternately with coffee and Kahlua; blend well. Fold egg-white mixture into batter. Pour into prepared pans and bake 30 to 35 minutes, or until done. Cool 20 minutes, invert onto wire racks and cool completely before frosting. 2. For frosting: Cream butter and confectioners' sugar. Add cocoa powder, Kahlua, and coffee.
