Ingredients:
750 g linguine 2 eggs, yolks 10 tbsp double cream 12 tbsp freshly grated parmesan cheese zest and juice of one unwaxed lemon 15 g butter Directions: Fill large pot with water, add lots of salt and bring to a boil. Once the water is boiling, add the pasta. Set timer for one minute, and prepare sauce while pasta cooks. Add yolks, cream, Parmesan, zest of the whole lemon and juice of half of it, a pinch of salt and pepper and beat mixture. After the minute passes, remove the pasta from the burner, strain, place in bowl and add sauce. |
