Default Salmon Burgers


Yield: 6

Ingredients:

Salmon Burgers
• 2 lb. salmon fillets
• 1 1/4 cups bread crumbs (310 ml)
• 4 x large shallots, finely chopped
• 1 cup capers chopped (250ml)
• 3/4 cup chopped flat leaf parsley (180 ml)
• 2 ½ Tbl sp lemon juice
• Garlic, chopped
• 6 x onion buns

Directions:

Salmon Burgers
1. Cut the salmon fillets into cubes and place into a food processor
with a metal blade. Pulse gently until ground. Scrape the contents
into a large bowl. Add shallots, parsley, capers, and lemon juice. Add
breadcrumbs gradually while mixing until you reach the desired
consistency.
2. Form mixture into 1-inch thick patties. Place on a plate, cover and
refrigerate for a minimum of 30 minutes or up to 24 hours.
3. Preheat grill to 375°F/190°C
4. Oil the grate well and grill each burger for approximately 6
minutes per side. Lightly toast the onion buns over low heat when
there is only 1 minute left to cook on the burgers. Serve with fresh
arugula, red onion and dill mayo.
