Ingredients
1 large russett potato 1 large sweet yellow onion 1 stick celery 1 carrot garlic powder/cloves chicken broth cajun seasoning and black pepper 1 bunch kale shredded and deboned --- in large pot cook in olive oil, onion celery carrot garlic over med heat for about 10 min until onions are clear. nuke potato for 3 min, peel and cut into large pieces. add potato to pot, plus add about 8-12 oz chicken broth. add cajun season to taste, plus some black pepper. bring to boil &reduce heat. add kale on top. cover and let kale steam for 5-8 min. stir. let simmer for about 20 min. |
