Mojito Chicken
This one's easy, delicious, and fun. It's the real deal. In the evening apply dry rub to 4 to 5lb chicken that's been cut up into 8 pieces Place in gallon size ziploc bag and put in fridge Next morning add marinade. Put back in fridge Flip bag every few hours To prep for dinner reserve marinade to sauce pan While searing pieces in fry pan 5 min per side Reduce marinade over stovetop to thicken Brush both sides of chicken with thickened marinade Bake 325 deg for 30 min Dry Rub 2 tbs garlic powder 1 tbs onion powder 1/4 tsp cumin 1 tbs oregano 2 tbs kosher salt 1 tbs fresh ground pepper 1 tsp paprika Marinade 1 cup orange juice Zest of 2 limes, juice of 1 1/4 cup heinz apple cider vinegar 1/4 cup canola oil 1 tbs diced garlic 1/4 cup dark rum 1 tbs honey Shake well Last edited by jayare : 25-06-2012 at 04:35 PM |
