Ginger chicken
![]() Ingredients 5 chicken thighs, skinless 2 tble fish sauce 1 tsp sugar 1/2 tsp cracked black pepper 6 garlic cloves, chopped 1 tble annotto oil 5cm ginger, peeled and cut into strips 90 ml water 3 Kaffir lime leaves, cut into thin strips Vegetable oil for frying Soy Chili Dipping Sauce Method Cut the chicken into cubes, approximately six pieces per thigh. Marinate the chicken for 30 minutes in the fish sauce, sugar and pepper. Fry the garlic in an oiled hot wok. Keep the wok moving so the garlic does not burn or stick. Add the annotto oil, ginger and the chicken pieces. When the chicken is evenly colored, pour in the water, turn up the heat and cook until the chicken is tender. Toss the Kaffir lime through the ginger chicken prior to serving. Enjoy the succulent chicken pieces dipped in the soy chili sauce. This recipe from Hanoi Cooking Centre |
