Lime marinated beef salad
![]() Ingredients 4 tble lime juice 3 tble fish sauce 2 tble sugar 2 garlic cloves, chopped 1 lemongrass stalk chopped 1 long red chilli, seeds removed and chopped 500g beef fillet 4 shallots, thinly sliced 1 cup Thai basil leaves 1/2 cup rice paddy herb 1/2 cup mint leaves 1/3 cup peanuts, roasted and chopped 2 tble fried shallots Vegetable oil for frying Method Prepare the marinade by combining the lime juice, fish sauce and sugar. Stir until sugar has dissolved. Add the garlic, lemongrass and chili. Cook the beef for eight to ten minutes in a hot pan, evenly browning all sides. Remove from the pan and rest for five to seven minutes before thinly slicing and tossing it through the marinade. Cover and set aside for two hours. To serve, remove the beef from the marinade and combine with the shallots, herbs and peanuts. Gently toss and place on a platter. Scatter the fried shallots on top to finish the dish.
