Enchiladas the easy way!
 

I videotaped my homemade, easy-to-make enchiladas. You can have these on the table, ready to eat in about 45 minutes (including baking time). My kids and wife love them. I usually make up some refried beans or some mexican rice as a side dish and we are good to go.
