Default Taco Chicken Casserole

I like this recipe cauz I'm a single father working two jobs.. Speed
and ease is key as well as a little variety.. When my two seventeen
year olds come back for seconds I know it is a hit!

Taco Chicken Casserole

2 pounds chicken tenderloins
1 onion, chopped
1 bag Nacho Cheese Doritos
1 can cream of mushroom soup
1 can cream of chicken soup
4 oz sour cream
2 jalapenos (omit for child mild!)
4 cubes chicken bullion
2 cups sharp cheddar

Saute chicken with a little oil along with the jalapenos and chopped
onion in LARGE skillet.. Chop the chicken parts into bite size
chunks.. Crunch up the Dortios slightly while still in the bag.. Add
to the chicken.. Boil four cups water and dissolve the bullion cubes..
Add the water, soups and sour cream to the chicken and Doritos in the
skillet.. This mixture will be very runny.. Bring to a boil and pour
into a greased casserole.. Bake at 350 for about 30 minutes.. Top with
the cheese and let stand five minutes to melt the cheese and for it to
thicken.. Serve stand alone or with some salsa on top..

This feeds about five adults or one adult with two hungry teenagers!!
Is good reheated.....
