Sweet-and-Sour Cabbage

Ingredients
1/4 cup unsalted butter
1 to 2 pounds red cabbage, cored and thinly sliced (about 6 cups)
3/4 cup cider vinegar
1/2 cup sugar
1-1/2 teaspoons caraway seeds
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

Directions
1. Melt butter in a deep nonreactive skillet over medium-low heat. Add
cabbage, vinegar, sugar and caraway seeds. Cover and cook 45 minutes,
stirring, until cabbage softens.

2. Remove cabbage from skillet with a slotted spoon, letting excess
liquid drip into skillet. Transfer cabbage to a large bowl. Cook
liquid
over medium-high heat 10 minutes, until it reduces to 1/2 cup. Add
sauce, salt and pepper to bowl with cabbage, stirring well to coat.
Makes 12 (1/2-cup) servings.
