CREME BRULEE
1 quart heavy cream 2 vanilla beans, split 1 cup granulated sugar, divided 12 egg yolks Brown or granulated sugar Preheat oven to 300 degrees. In a heavy-bottomed pan, scald the cream, split vanilla beans, and 1/2 cup of the sugar until sugar is dissolved. Remove vanilla beans. In a large bowl, place the egg yolks and whisk with remaining 1/2 cup of sugar. Pour cream-sugar mixture over yolk-sugar mixture. Whisk to combine. Scrape seeds from vanilla beans into mixture. Strain mixture and pour into 4-ounce custard cups. Place cups in a baking pan. Pour water into pan about halfway up sides of filled cups. Bake until set, 30 to 40 minutes. Cool. Preheat broiler. Top each baked custard with thin layer of brown or granulated sugar. Place under broiler and bake until caramelized. Makes eight servings.
