Default The Chefs Own Barbecue Sauce

The Chefs Own Barbecue Sauce



1 cup (250 ml) dry red wine

1/4 cup (60 ml) balsamic or red wine vinegar

1/4 cup (60 ml) olive oil

2 Tbs (30 ml) Worcestershire sauce

2 Tbs (30 ml) soy sauce

1 onion, coarsely chopped

1 Tbs (15 ml) sugar

1 Tbs (15 ml) grated orange zest

1 tsp (5 ml) ground ginger

3 - 4 cloves garlic, coarsely chopped



Combine all ingredients in an electric blender or food processor and

process until fairly smooth but still slightly chunky. Transfer to a

saucepan and bring to a boil over moderate heat. Reduce the heat and

simmer uncovered for 10 minutes. The sauce will be quite thin. Makes

about 2 cups (500 ml).
