Austrian Steak
(Esterhazy Rostelyos) Serves 4 4 Rib steaks, 1" thick, and boneless 1/4 cup flour 1 tsps. salt 1/2 pst. pepper 4 Tbsp. butter 3/4 cup chopped onions 1 carrot grated 1/4 lb. of mushrooms 2 Tbsp. minced parsley 1 Bay leaf 1/2 cup water 1/2 cup sour cream 2 Tbsps. capers Trim fat from steaks. Dip in mixture of flour, salt and pepper. Mielt butter in skillet, brown steaks quickly on both sides. Add the onions, carrot, mushrooms and parsley. Let brown 5 minutes. Add the bay leaf, and water. Cover, cook over low heat 15 min. Transfer to a heated platter....discard bay leaf, put sauce in blender, and puree. Return to skillet, blend in sour cream and capers. Pour over steak. |
