MRS. BIRDIE'S BREAD

The neighbor kids thought Mrs. Birdie was a witch. "Weird" smells were
always coming from her house. Later, they found it was the smell of this
bread.



2 Pkg. dry yeast

2 C. brown sugar

2 C. Milk

1 Tsp. salt

3 C. wheat germ

2 C. vegetable oil

2 C. whole wheat flour

1 Tsp. brown sugar

1 C. unbleached flour



Pour 2 cups warm water into small bowl. Add 2 packages yeast and 1-Tsp.
brown sugar. Stir and set aside. Heat 2 cups milk, and add:



2 Tbl. brown sugar

1 Tsp. salt

3 Tbl. wheat germ

2 Tbl. vegetable oil.



Heat and stir until sugar is dissolved, but do not boil. Empty into big
bowl. Add 1/2 water. Add yeast mixture and stir. Stir in 2-C. whole-wheat
flour and gradually add 1 C. white flour. Knead dough for at least 10
minutes. Oil inside of the big bowl. Pat dough into a ball and put inside
the bowl. Cover with towel and set in warm place for 1 hour, until dough is
twice as big. Punch down. Let dough rest 5 minutes. Put into bread pan,
oiled. Cover with towel for about 2 hour until doubled. Bake 30 minutes at
400 degrees. Remove from pan and cook on rack.
