Tomatillo and Red Pepper Salsa
Ingredients:
4 medium tomatillos, cooked, peeled
4 medium red bell peppers, seeded
1 small jalapeno pepper (or a hotter variety)
1/4 cup minced, fresh cilantro
1 tablespoon herb vinegar
Place everything in a blender or food processor and process til almost
smooth, but leave it a little chunky is you wish. Season with salt.
