Thai Style Noodle Salad

Category : Pasta Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound safeway linguine 8 ounces snow peas -- halved lengthwise 2/3 cup creamy peanut butter 3 tablespoons fresh lemon juice 3 tablespoons soy sauce 2 tablespoons white wine vinegar 1/4 teaspoon crushed red pepper flakes 1/2 cup vegetable oil 2 cups shredded cooked chicken 1 red bell pepper -- cut into thin -- strips 2 green onions -- sliced chopped: fresh cilantro Ready, set, cook! Cook linguine in large pot of boiling salted water until almost tender. Add snow peas and cook until pasta is tender but still firm to bite and snow peas are crisp tender. Meanwhile, blend peanut butter, lemon juice, soy sauce, vinegar and pepper flakes in processor or blender. Gradually add oil and process until blended. Drain pasta and snow peas. Transfer to large bowl. Add chicken, bell pepper and green onion. Pour peanut butter mixture over and toss to coat. Season to taste with salt and pepper. Sprinkle with cilantro. Prep Time: 10 minutes Cook Time: 15 minutes Makes: 6 servings This main-course salad can be made vegetarian by just omitting the chicken. Serve it with hot green tea.
