Cottage Cheese Pancakes
3 Eggs 1 cup cottage cheese 3 Tbsp Flour 1/2 tsp flavoring (I like coconut, but try any flavor you like) Separate the eggs, putting the yolks in a blender with the cottage cheese and the flour and flavoring, and the whites in a mixing bowl. Whip the whites until stiff, but not too dry. Blend the yolks, cottage cheese and flour until smooth. Fold the yolk mixture into the beaten whites. Heat a griddle, medium hot. Spoon the batter like any pancakes onto the griddle and cook slowly, turning them when brown. Serve with syrup or jelly. Makes 10 to 12 pancakes |
