Eipfannekuchen - recipe for one portion can make up to four portions

in a large frying pan



ingredients:

1 egg

1 Tbs Bisquick or other biscuit/pancake mix

1tbsp milk

1 Tbs butter



Melt the butter in a small frying pan. Beat or blend the rest of the

ingredients until bubbles form. Pour into pan. Turn when mixture

sets and pancake holds together. Serve immediately.



Auntie used to simply serve sprinkled with granulated sugar. My

mother tends to serve with syrup, and usually rolls the individual

pancakes. My husband likes to spread with jam and roll up the

pancakes. When I'm lazy and make 4 at once in a large pan, I quarter

the pancake and turn the quarters individually.
