Breakfast for 4 people who are going to round up cattle or something
the rest of the day - it sticks with you. Eggs Goldenrod 4 eggs - hard boiled, peeled and split, remove and set aside the yolk. 2 tbls butter 2 or 3 tbls flour 1 1/2 cups milk salt and pepper to taste. Toasted English muffins or regular toast Make a roux with the butter and flour, add milk and stir until smooth and has consistency of good gravy. Chop up whites of eggs, not too fine. Add eggs to white sauce. Stir. Spoon sauce over muffin. Put yolks in a fine strainer and mash with a spoon over sauce/muffin, this makes the "goldenrod." Great with country ham or bacon. Note, like most really great tasting foods, this is not a heart healthy meal. This a very filling breakfast |
