Fresh Apple Cake
2 cups sugar 1 1/2 cups oil 3 eggs 3 cups flour 1 teaspoon soda 1/2 teaspoon salt 2 teaspoons cinnamon 1/2 teaspoon nutmeg 3 cups chopped peeled tart apples (I use Granny Smith) 1 cup chopped walnuts 2 teaspoons vanilla extract Glaze: 2 tablespoons butter 2 tablespoons heavy cream 1/4 teaspoon vanilla extract 2 tablespoons brown sugar 2 tablespoons white sugar Beat 2 cups sugar and oil in mixer bowl until well blended. Beat in eggs one at a time. Sift in flour, soda, salt and spices. Beat until smooth. Add apples, walnuts and 2 teaspoons vanilla; stir until well mixed. Pour into greased and floured 9 inch tube pan. Bake at 325 degrees for 1 1/2 hours or until cake test done. Combine butter and remaining ingredients in saucepan. Bring to a boil, stirring constantly. Boil for 1 minute. Pour over warm cake. Cool in pan. Turn onto serving plate. Note: Dough will be very stiff. Makes one large cake. |
