Coffee Chip Cookies
I really like this recipe because it makes a soft chocolate chip cookie and they are easy to store and freeze well. Ingredients: 1 c. shortening 2 c. packed brown sugar 2 eggs 1 c. boiling water 2 T. instant coffee granules 4 c. all-purpose flour 2 tsp. baking powder 1 tsp. baking soda 4 c. semisweet chocolate chips Directions: In a mixing bowl, cream shortening and brown sugar. Add eggs one at a time beating well after each addition. Combine water and coffee; set aside. Combine flour, baking powder and baking soda: add to creamed mixture, alternating with coffee. Stir in the chocolate chips. Refrigerate 1 hour. Drop by rounded tablespoonfuls 2 inches apart onto greased baking sheets. Bake at 350 degrees for 10-12 minutes or until golden around the edges. Remove to wire racks. Makes about 3-4 dozen. I do not use a greased pan, I use parchment paper (it works great). Submitted by: Laura from Hinsdale N.Y. |
