CHOCOLATE CHIP CRATER CAKE
2c. buttermilk baking mix 1/4c. granulated sugar 2/3c. milk 1 medium or large egg 1tsp. vanilla 1c. semi-sweet chocolate chips Heat oven to 350 degrees. Grease a square baking pan, 8" X 8" X 2". In large mixing bowl combine baking mix, sugar, milk, egg, and vanilla. With an electric mixer, beat at low speed until moistened. Beat on medium speed until smooth. Pour 1/2 the batter into prepared pan. Sprinkle chocolate chips over batter in pan. Top with remaining batter, covering chips completely. Sprinkle topping mixture (recipe follows) evenly over batter. Bake at 350 degrees for 25 - 30 minutes or until the top springs back when touched lightly. Cool completely and cut into squares. TOPPING MIXTURE FOR CHOCOLATE CHIP CRATER CAKE 1/4 c. granulated sugar 1/4 c. brown sugar, firmly packed 1/4 c. buttermilk baking mix 1/4 c. butter or margarine, softened 1 tsp. ground cinnamon Combine all ingredients in a small mixing bowl until crumbly. |
