Oatmeal Krispies
Ingredients: 1/2 c. chocolate mini-chips 1/3 c. stick margarine (softened) 1/4 tsp. salt 1/2 c. packed brown sugar 1 1/2 c. quick cook oatmeal 1/3 c. egg beaters (1 egg) 1/2 tsp. vanilla 1/2 c. Rice Chex® cereal 3/4 c. flour 1/2 tsp. baking soda 1/2 c. shredded coconut (optional) Directions: Preheat oven to 350 degrees. Cream margarine. Gradually add sugar, beating until well blended. Add egg and vanilla; beat well. Combine flour, baking soda, and salt in a medium bowl. Add to creamed mixture and blend well. Stir in oatmeal, chips, cereal, and optional coconut, blending well. Drop by level tablespoons, 2 inches apart, onto a cookie sheet which has been sprayed with Pam. Bake 8 minutes or until or until it is it is light brown. HINT: I bought a small serving scoop with a lever on it to help scoop and form the little balls. This recipe came to me from a Weight Watchers counselor. They are delicious. Submitted by: Jean |
