Default Truly Good Scones

Truly Good Scones
(original recipe just called Scones, but I had to rename it!)
GNR

1 3/4 Cups flour
2 Tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt

1/3 Cup shortening
1/2 Cup raisins or currants (optional)

1 egg, well beaten
1/2 cup milk (2% or homogonized)

Preheat oven to 450 degrees F.
Blend or sift together dry ingredients. Finely cut in shortening.
Add raisins/currants if using.

In a separate bowl, combine egg and milk together, mixing well then
add
to dry ingredients and stir lightly with a fok to make a soft dough.

Turn dough onto a lightly floured surface and knead gently 8-10 times.
Divide dough into two parts; roll each into a 6" circle. Place
circles
of dough on a lightly greased baking sheet and brush each with milk
and
sprinkle with a little sugar. Score each circle into quarters.

Bake in preheated oven 10-12 minutes
Yield: 8 scones
Delicious with butter and jam!!
