Default Mint Jelly

JIM'S MINT JELLY

2 cups Mint leaves ; chopped
1 cup Water ; boiling
1 teaspoon Lemon Juice ; fresh
3 cups Sugar
1/2 cup Cider Vinegar
3 oz Liquid pectin ; 1 pouch
4 Mint ; sprigs

-= Instructions =-
In a glass heat proof bowl, place chopped fresh mint and add the boiling
water.

Cover and let stand for 30 minutes.

Drain and squeeze out the mint through a colander and add enough water to
make 1 cup.

Place this infusion, lemon juice, sugar and vinegar in a heavy saucepan.
Bring to a hard boil. Immediately add the pectin and food colouring ( few
drops of green) if desired. Continue cooking to a full rolling boil. Boil
for exactly 1 minute. Remove from heat and skim off foam with a metal
spoon. Pour into hot sterilized jars, add optional finely chopped fresh
mint if desired.

Put your lids that have boiled 5 minutes on the jars and screw bands on hand
tight.

It takes at least 24 hours for the jelly to set.
