SPICED CUCUMBER RINGS
16 cucumbers = 15 pints. Adjust your needs to t he amount of pints. 2 gal. of cucumber rings (about 15 cucumbers) 2 cups dehydrated pickling lime 8-1/2 qts. water to cover rings 1 cup vinegar 1 small bottle red food coloring 1 T. alum Syrup 2 cups vinegar 10 cups sugar 2 cups water 8 cinnamon sticks 1 pkg. "red hots" (candies) Peel cucumbers. Slice lengthwise. Scrape out seeds. Cut across cucumbers making half rings. Stir lime into water and the cucumbers. Let stand 24 hrs. (Use the inside of a crockpot, crock, enamel or plastic pan) Pour off outside, NOT DOWN DRAIN Wash in cold water. Pour on cold water to cover. Soak 3 hrs. or overnight. Drain Add 1 cup vinegar, a small bottle of red food coloring and 1 T. alum and enough water to cover. Heat and simmer for 2 hrs. Syrup Bring above syrup ingredients to a boil. Pour over rings. Cover and let stand 24 hrs. Drain off syrup, reheat and pour again over rings. Do this three (3) mornings total. Last morning, heat rings and syrup, pack in jars after removing cinnamon sticks and seal. Yield: 15 pints |
