Beer Can Chicken



1 whole chicken broiler fryer

1 can beer-any kind or ginger ale if you don't have beer

8-10 cloves garlic

1 med. chopped onion

1 tsp. chili powder

1 med. acorn or other small squash

2 baking potatoes



tossed salad and fresh fruit and crusty bread complete this easy meal

and it can easily be increased to feed more but it is a nice meal for

2, attractive and easy.



drink or pour out 1/2 of the beer or soda add the chopped garlic,

onion and chili powder to the can rinse the chicken and place the

chicken over the beer can (place the chicken but side over the can

using the base of the can and the legs to balance the chicken. Place

on a wire rack in a baking pan--add the veggies (if using the grill I

wrap the veggies in foil) bake at 350 for 1 1/2 hours until golden and

veggies are done.



This is wonderfully juicy and the grease drains off for a healthy

preparation. Garnish with parsley, carrot curls for a festive touch.
