Chicken a la Maria

(recipe can easily be halved)



3/4 cup Italian-seasoned fine dry bread crumbs

1/4 cup grated Parmesan cheese

12 large chicken breast halves, skinned and boned

1/2 cup sliced green onion

2 tbs. butter or margarine

2 tbs. all-purpose flour

1 cup milk

1 10-ounce package frozen chopped spinach,

thawed and well-drained

1 4-ounce package boiled ham slices, diced



Combine bread crumbs and cheese; dip chicken breast halves in crumb

mixture to coat lightly. Arrange in a 13x9x2-inch baking dish. Set

remaining crumb mixture aside. In saucepan, cook onion in butter or

margarine till tender. Blend in flour; stir in milk all at once.

Cook and stir till thickened and bubbly. Cook and stir 1 minute more.

Stir in spinach and ham. Spoon spinach mixture over chicken; sprinkle

with the remaining crumb mixture. Bake, uncovered, in 350 degree oven

for 40-45 minutes or till done. Makes 12 servings.
