Chicken Medley
Bottom layer: Coating for chicken: 3 Tablespoons butter 3/4 cup graham cracker crumbs 4 cups thinly sliced potatoes 1 tsp. salt 1 lb. bag frozen yellow corn 1 tsp. basil 1 tsp. salt 1 tsp. basil 1/3 c. melted butter 3 lbs. boneless, skinless chicken breast Melt 3 Tablespoons butter in a 13x9x2 baking dish. Add potatoes and corn. Sprinkle with 1 tsp. each salt and basil. Set aside. In a 9-inch pie pan combine graham cracker crumbs, 1 tsp. each salt and basil: mix well. Dip chicken in 1/3 cup butter, then into crumb mixture to coat; place on top of vegetable mixture. Cover tightly with foil; bake near center of oven at 375 degrees for 75 minutes or until chicken and vegetables are fork tender. Remove foil; bake 10 minutes more if additional browning is desired. Serves 4 to 6 |
