Miri's kimchi recipe
1 head Nappa cabbage red pepper powder (available in any Asian store) salt garlic green onion fish sauce (optional--she doesn't always add it and I will add no more than 1 T when I make this) sugar 1 gallon jar--I recycle a pickle jar clean and chop cabbage to desired size soak in salt water for about 3-4 hours or until cabbage wilts drain and rinse (if too salty) get some red pepper powder (to taste) garlic (for 1 cabbage about 1 large clove) onions (green) (about 1 bundle) fish sauce (about 1-2 TBS to your desired taste) sugar (about 1 TSP) can use MSG in place of sugar Mix all ingredients, now you have original MIRI kimchi. You can use the base recipe to make cucumber or radish kimchi as well. In fact I'd think most any vegetable would be good in this. _______________________________________ |
