Zucchini crisp
Step 1 8 cups cubed, peeled zuchinni without seeds (I don't remove seeds) 3/4 cup lemon juice 1/2 - 3/4 cup sugar 2 tsp cinnamon 1 tsp nutmeg mix together and place in 13"x9" pan Step 2 1 1/3 cup packed brown sugar 1 cup oats 1 cup whole wheat flour 2/3 cup cold butter or margarine Mix first 3 ingredients and cut in butter until a coarse mixture without loose flour is made. Step 3 Sprinkle this mixture over the zucchini evenly. Bake in preheated oven at 375 degrees (350 if a dark or glass pan) for 40-50 minutes until top is browned and zucchini is tender. Side note: I have mixed other fruit with the zucchini for this dish. Apples and zucchini are good together and so are apples, cherries and zucchini. I have tried peaches with it but I didn't care for the texture combination. The taste was ok. If you have questions ___________________________ |
