Chicken, Tomatoes, etc. and pasta- for one
Gemelli (or other small pasta); as much or as little as you'd like 1 boneless skinless chicken breast, cut into bites 1 med. tomato, diced 1 clove garlic, crushed or chopped 5-10 (depending on your taste) fresh basil leaves, chopped ~3 Tbs. white wine ~1Tbs olive oil Salt & pepper, to taste Fresh Romano cheese for topping Cook pasta per directions on box. In a frying pan or skillet, heat oil and add garlic. Add chicken, and monitor carefully, making sure that the chicken does not get too dry (just add a little extra wine or oil, if it does). Add white wine and basil; cook all together, moving it all around so it doesn't stick. When chicken is cooked through, add tomato (seeds and all), salt, and pepper until all is hot, but the tomato has not yet become too mushy. Drain pasta, put it on a plate, and top with skillet items. Grate some Romano over the top just prior to serving. |
