Easy Gourmet Chicken
4-5 oz. noodles or linguine, cooked el dente 2 cups sour cream ( I use fat free) 2 cups cooked chicken, cut in 1" cubes 1 Tbs butter or margarine 3/4 cup strong chicken broth 1/4 cup Marsala wine ( or Sherry) 8 small boiling onions or 1 medium onion sliced 1/4 cup olives, sliced,black or green 1 cup sliced fresh mushrooms In large skillet, melt butter and add chicken, mushrooms and onions and saute till onions are transparent.Add chicken broth and wine to mixture. Add noodles, and gently mix, add olives. Cook 10 minutes at medium heat. Add sour cream, do not boil, mix gently. If sauce is thin sprinkle a small amount of instant flour, like Wondra, on top and stir. |
