International Mix



4 chicken breasts skinned

8 oz sliced mushrooms

8-10 oz package frozen artichoke hearts

(if you can find fresh baby artichokes are best)

1/2 cup thinly slices green onions

2 Cups fresh spinach finely chopped

1/2 cup shredded carrots

1 clove minced garlic

fresh ground pepper to taste

1 Tbs. Hoisin Sauce if desired

6 Cups Chicken broth

1 package rice noodles

Steam or poach chicken breasts.

Sesame oil



Meanwhile soak the rice noodles for 5 minutes in hot water then drain.



Saut the vegetables in a small amount of oil and 1/2 cup broth, until

soft add the noodles an saut another 3-5 min.



Shred the cooked chicken and add to the noodles and vegetables. This

is when you decide soup or casserole. Add enough broth to give the

desired consistency.



I frequently add other vegetables for a change in color, fresh corn,

peas green beans, whatever you enjoy.



This is great with crusty bread, a salad. Experiment
