Maple Chicken



Four boneless chicken breasts

2 Tbs. soya sauce

1/3 cup flour

2 tsp. ground ginger

1/4 cup veg. oil (or PAM)

2 cloves minced garlic

1/2 cup maple syrup

1/2 tsp. pepper

2 Tbs. vinegar

1/4 tsp. paprika

2 Tbs. sherry (or wine)

Cornstarch - (to thicken slightly )



Coat chicken breasts with flour, and brown in pan (with oil or PAM)

for five minutes. Arrange in 9" square pan. Mix balance of

ingredients in small bowl, and mix in cornstarch well. Pour over

chicken. Bake 350 F - 45 min. to one hour (watch after 45 min.) For

the first half of time, fully cover the chicken. Turn the chicken

over, and let finish cooking - uncovered.



This is excellent served with rice (nice tangy sauce), pasta, or

potatoes, if desired. This recipe serves four generously. We usually

have the first two breasts hot. Then, another dinner we will slice

the two breasts on the diagonal, and serve over a homemade Caesar

salad. Yum!
