SALSA CHICKEN
2 boneless, skinless chicken breasts 1 package taco seasoning mix 1 tablespoon oil (optional) 1 cup chunky salsa 1/2 cup shredded cheddar cheese (low fat can be used) Rinse chicken breasts with water and coat both sides of chicken with taco seasoning mix. Depending on the type of skillet you have you may want to use oil to keep the chicken from sticking. Heat pan on medium high and sear chicken approximately 3-4 minutes on each side. Remove chicken from pan and slice chicken on an angle, into 1/4" thick slices. Return chicken to pan and thoroughly cook until meat is white. Add salsa to chicken. Heat thoroughly. Top mixture with cheese, allowing cheese to melt. Optional items you can add: 1/2 to 1 cup sweet corn, 1/2 to 1 cup black beans (draining juice from cans). Can be served alone or with rice or other side dish. Serves 2 - 4. |
