![]() Southern Oven-"Fried" Chicken 1/2 cup skim buttermilk(or skim milk) 2-3 dashes of paprika 3/4 ounce corn flakes, crushed (not the sugar coated) 3 tablespoons all-purpose flour 1/4 teaspoon salt 1/4 teaspoon pepper One pound of chicken, skinned and quartered, (can also use boneless, skinless chicken) 1or 2 tablespoons of corn oil. 1. Preheat oven to 400 F. Spray large baking sheet with a non stick cooking spray. 2. Put the milk in a large bowl. On a sheet of wax paper, combine corn flake crumbs, flour, salt, pepper and paprika. 3. Dip the chicken pieces in the milk, then coating completely with the corn flake mixture. 4. Place chicken on prepared baking sheet; drizzle evenly with oil. Bake 30 minutes: turn pieces over and bake 15-20 more minutes, Until it is fully cooked. Serves 4 |
