Pineapple salad
Ingredients 1 – 8 oz. block of cream cheese, cut into 1/4 cup finely crushed walnuts or pecans 1 small can of pineapple chunks, drained (set the pineapple juice aside for dressing) Iceberg lettuce broken into bite sized pieces Dressing ingredients 2/3 cup Hellman's Mayonnaise Approx. 2 tablespoons cider vinegar Sugar to taste Directions 1. Cut the cream cheese into small even squares, and then roll the squares into a ball shape. 2. Next roll the cream cheese balls into the crushed nuts. 3. Toss lettuce & pineapple pieces, arrange cheese/nut balls around top. Serve with dressing on side so guests can top with as much or little as desired. Dressing directions Mix mayo, sugar and vinegar together. Note: If reduced sugar is desired add some of the pineapple juice to the vinegar first, then add some sugar until desired sweet/sour blend is achieved). Blend well & refrigerate. |
