Uncle Bart's Chicken Caccitore

(My nephews go ape for this dish)

1 broiler fryer chicken
8 oz sliced button mushrooms
8 oz fresh or frozen baby peas (Never canned)
2 tablespoons capers
2 qts Uncle Bart's Basic Tomato Sauce *See below
1/4 cup Olive Oil

Cut up the chicken as Alton showed in Fry Hard II, except keep the
wings for the dish. Heat a skillet and add the olive oil. Brown off
all the chicken a few pieces at a time until almost done. Set aside as
they are done. Next, add the mushrooms and cook until crisp. Return
chicken to pan and add UBBTS*. Bring to boiland lower to simmer for 35
minutes. Add peas and simmer 10
minutes more and finally add capers and cook 5 minutes more. Serve
with rice or orzos.

Uncle Bart's Basic Tomato Sauce

2 28 oz cans whole plum tomatoes (In thick puree)
3/4 cup diced onions
1/4 cup diced garlic
1/4 cup olive oil
salt (to taste)
6 - 8 fresh basil leaves
1/2 teaspoom Oregano (optional)

Heat oil in saucepan add onion and garlic until just cooked. Add 2
cans of tomatoes that have been crushed in your hands or blender,
whicheer you prefer. Add salt, usually about a teaspoon, and torn
basil leaves. Bring to a boil and lower to a simmer for thirty
minutes. Add oregano if you like it. My Mother doesn't so I usuallly
leave it out.
