Cooking technique: Stir-fry tips
Stir-frying employs the Asian technique of rapidly frying small pieces of food in a small amount of oil over high heat. * Most food that's stir-fried is crisp-tender, nutritious and attractive (vegetables keep their color, and foods do not absorb much oil). * When stir-frying, prepare all ingredients before you start. * Add oil to a hot skillet, lift and tilt skillet to distribute oil over bottom. * Let oil preheat about 1 minute. * As you add food, try not to overload the skillet; if too much is added at once, the skillet cools and food will stew rather than fry. |
