Spanish Rice
8 slices of bacon fried till crisp 1 cup chopped onion 1/4 cup chopped green pepper 1 1 # can tomatoes undrained 3/4 cup uncooked long grain rice 1/2 cup chili sauce 1 teaspoon salt (I use much less) 1 teaspoon brown sugar (I use a good heaping teaspoon) 1/2 teaspoon Worcestershire sauce dash or two pepper This recipe says to save half the fat for this but it's too much so save enough bacon grease to saute' the onion and green pepper till tender but not brown. Then add all the other ingredients, except the bacon, cover and simmer on low till rice is tender, about 40 minutes. Stir in the crumbled bacon and enjoy.
