SEAFOOD SALAD SANDWICHES
16 oz cooked crab meat, torn or chopped 1 cup cooked small shrimp, peeled 1/2 cup mayonnaise or salad dressing 2 medium celery stalks, chopped 3 Tbsp minced onion 1 Tbsp lemon juice 1/2 tsp Beau Monde seasoning or Cajun/Creole seasoning 6 to 8 croissant or French rolls lettuce leaves tomato slices Combine crab meat, shrimp, mayo, celery, onion, lemon juice and seasoning, blending well. Cover and chill at least one hour before serving. To serve, spoon mixture onto bottom half of rolls, top with lettuce and tomato slices, and top half of rolls. Serves 6 to 8. **I usually spread mayo or butter on the cut side of the top half of the roll. Helps the sandwich stay together better! |
